Even my picky boy was digging in the jar all day long! Set one cup aside.<\/p>\n<ol>\n<li>In a blender or food processor, blend the dates until they are smooth and creamy with minimal chunks of skin.<\/li>\n<li>Chop the nuts so that no piece is larger than half your pinky fingernail, but make sure you do not crush them into a powder.<\/li>\n<li>In a bowl, using your hands, mix the nuts, 1\/2 cup coconut flakes, and creamed dates until the ingredients are uniformly distributed.<\/li>\n<li>Place the remaining cup of coconut flakes into a small bowl.<\/li>\n<li>Using a cookie scoop or soup spoon, scoop about 1 tablespoon of the mixture into the bowl of coconut. Press the coconut onto the bar to coat while shaping the coconut into a bar about 1&#8243; X 1\/2&#8243; X 1\/2&#8243;.<\/li>\n<li>Set the bars on parchment paper and refrigerate 10 minutes.<\/li>\n<li>Once cold, store your coco-nutty date bars in a glass jar in the fridge.
