Today I made a batch of these, and they were gone by night. Even my picky boy was digging in the jar all day long! Prepare to get sticky when mixing this recipe! 😃
4 cups dates
1 cup raw, unsalted, mixed nuts (I prefer peanut-free to minimize inflammatory ingredients)
1 1/2 cups unsweetened coconut flakes. Set one cup aside.
- In a blender or food processor, blend the dates until they are smooth and creamy with minimal chunks of skin.
- Chop the nuts so that no piece is larger than half your pinky fingernail, but make sure you do not crush them into a powder.
- In a bowl, using your hands, mix the nuts, 1/2 cup coconut flakes, and creamed dates until the ingredients are uniformly distributed.
- Place the remaining cup of coconut flakes into a small bowl.
- Using a cookie scoop or soup spoon, scoop about 1 tablespoon of the mixture into the bowl of coconut. Press the coconut onto the bar to coat while shaping the coconut into a bar about 1″ X 1/2″ X 1/2″.
- Set the bars on parchment paper and refrigerate 10 minutes.
