Coco-Nutty date bars

Today I made a batch of these, and they were gone by night. Even my picky boy was digging in the jar all day long! Prepare to get sticky when mixing this recipe! 😃

4 cups dates

1 cup raw, unsalted, mixed nuts (I prefer peanut-free to minimize inflammatory ingredients)

1 1/2 cups unsweetened coconut flakes. Set one cup aside.

  1. In a blender or food processor, blend the dates until they are smooth and creamy with minimal chunks of skin.
  2. Chop the nuts so that no piece is larger than half your pinky fingernail, but make sure you do not crush them into a powder.
  3. In a bowl, using your hands, mix the nuts, 1/2 cup coconut flakes, and creamed dates until the ingredients are uniformly distributed.
  4. Place the remaining cup of coconut flakes into a small bowl.
  5. Using a cookie scoop or soup spoon, scoop about 1 tablespoon of the mixture into the bowl of coconut. Press the coconut onto the bar to coat while shaping the coconut into a bar about 1″ X 1/2″ X 1/2″.
  6. Set the bars on parchment paper and refrigerate 10 minutes.
